Our Story

A group of tequila-loving Houstonians set out to find the finest producer in the highlands of Jalisco, México—driven not just by taste, but by a feeling. Partnering with a master distiller, they created a spirit that captured the boldness of tradition, the smoothness of good company, and the freedom of saying “maybe tomorrow… but definitely tonight.” That spirit became Chancé Mañana—a toast to living fully, savoring slowly, and never waiting too long to raise a glass.

Paul Hernandez

Pablo Hernández grew up in an agricultural family that cultivated avocados in Mexico and apples in Washington State. Family connections led him to an opportunity in the energy sector in Houston, where he worked as an energy and natural gas sector.

During that time, he also spent significant periods in Mexico, immersing himself in the study of the agave plant and the art of distillation. In 2015, he fully committed to agave and its many distillable products. For eight years, he trained under the guidance of Master Distiller Alejandro Campos Sandoval at Grupo Industrial Tequilero de Los Altos de Jalisco Distillery, honing his craft and deepening his expertise in tequila production. Today, Pablo is a certified master distiller.

In 2019, Pablo partnered with family and investors to introduce Tequila Veneno to the Houston and Texas markets. Within three years, they successfully grew sales to 30,000 bottles per year. By the end of that period, the investors secured a lucrative offer to sell the business.

Through this venture, Pablo gained extensive experience in marketing tequila and mezcal to the restaurant, bar, and retail sectors, solidifying his reputation as a skilled entrepreneur and expert in the spirits industry.

Alejandro Campos

With a deep-rooted passion for tequila production and decades of hands-on experience in the industry, Alejandro Campos Medina stands as a master distiller dedicated to preserving and innovating the craft of Mexico’s most iconic spirit. A graduate of the Benemérita Universidad Autónoma de Puebla with a degree in Chemical Engineering, Alejandro has devoted his career to perfecting the art and science of tequila distillation.

His journey in the tequila industry began with key roles in quality control and production at renowned distilleries, including Tequila Centinela and Grupo Industrial Tequilero de Los Altos. Throughout his career, he has specialized in process supervision, quality assurance, and analytical techniques such as gas chromatography to refine tequila’s composition, ensuring excellence in both taste and compliance with regulatory standards.

Beyond production, Alejandro has pursued continuous education in distillation techniques, water treatment, and filtration, attending expert seminars and industry congresses to stay at the forefront of tequila innovation. His expertise extends to sustainable practices in agave cultivation and the efficient operation of distillation equipment.
